Just a quickie – seems to be what I have time for these days.

I designed the following recipe for a client who needs to eat a grain-free diet to support her in healing from some severe gastrointestinal difficulties. She’s missing her comfort foods, in particular a rice casserole dish. I tested it out on some friends, and there were no leftovers 😉

    Cauliflower Rice Casserole

    Ingredients:

  • 1 head cauliflower
  • ½ can coconut milk, Natural Value brand preferred (no thickeners added) or 1 cup coconut yogurt
  • 1/3 cup meat broth
  • 1 Tbsp wheat-free tamari
  • 2 Tbsp minced onion or shallots
  • 1 clove minced garlic
  • 1 Tbsp lemon juice
  • 1 tsp raw honey (optional)
  • Celtic sea salt to taste
  • Black pepper to taste
  • 2 Tbsp nutritional yeast
  • 4 slices crisped bacon, preferably nitrate-free or 1 cup diced nitrate-free ham
  • ½ bunch broccoli florets
  • ½ cup crushed hazelnuts, or hazelnut flour
  • Directions:

    Grate the cauliflower and set aside.

    In a blender or food processor, mix ingredients 2 – 10 until smooth.

    Mix all the ingredients together except the hazelnuts and place in an oven proof casserole dish. Top with hazelnuts.

    Bake at 350F until bubbling, approximately half an hour – 45 minutes. Place under broiler at the end for 2 – 3 minutes to crisp the nut topping.

    Serves 6 as a side dish, 3 as a main dish.
