Cauliflower Hummus

My mother passed away on August 23rd. I know some of you may be wondering. I’m slowly coming out of a fog of grief and exhaustion. I know I’ll be writing more soon, but all I can seem to muster so far is a recipe. I’m so grateful for cooking, it’s very healing.

I’ve been trying to figure out a clever name for this, but “Caulummus”, or “Humiflower” don’t quite work for me. Actually, “Hummiflower” is kinda cute, but I don’t think anyone would know what I mean.

I’ve been seeing recipes for it here and there on the internet, and thinking – is there anything you can’t do with cauliflower? This one is exciting for me, I’ve been craving and caving in to hummus lately, with not such great results. I finally have somewhere to turn when the Middle Eastern itch hits. Most of the recipes don’t quite look right to me – I love a tahini heavy hummus. Here’s my version.

Cauliflower Hummus

Ingredients:
• 1 medium head of cauliflower, steamed al dente
• 2 cloves garlic
• 3 – 4 Tbsp lemon juice
• ½ – ¾ cup tahini
• Celtic sea salt to taste
• enough extra virgin olive oil to give desired texture and flavor
• Optional – ¼ cup chopped Italian parsley
• Optional – 2 tsp ground cumin
• Optional – ¼ cup pitted kalamata olives
• Optional – ¼ cup sun-dried tomatoes

Directions:
Chop garlic well in a food processor or blender, then add all other ingredients except olive oil. Blend/process, adding olive oil to help the machine blend it all. Don’t be afraid to add plenty of olive oil, it’s delicious!

Serve with slices of cucumber and tomato, or with nut/seed crackers.

Don’t be afraid to play with the quantities of the ingredients. Taste and see – would you like it more tart? Add more lemon juice. Spicier? Throw in another clove of garlic, or add a sprinkle of cayenne. Want a creamier texture? More olive oil or tahini. Recipes are just suggestions!

    I totally understand how you feel. I lost my mother Aug 21st, 20 years ago and I still miss her.
